Tucker Farms, Inc. is a family-owned and operated potato farm on the north slope of the Adirondack Mountains twenty miles north of Lake Placid. This relative isolation and high elevation is ideal for growing vigorous, top-quality, disease-free seed potatoes. In season, we also offer hand-picked, farm-fresh vegetables to those who want the highest quality produce possible, U-pick (pick your own) strawberries to those willing to work for their own, a wide variety of squash, pumpkins and gourds for those who know their cucurbits and TuckerTaters™ tablestock potatoes for those who know their potatoes. ![]() ![]() Cartoon courtesy of Mark Wilson @ EmpireWire.com Steve and Tom Tucker attended the historic U.S. Farm Bill hearing at Saranac Lake, and even though they did not testify (fellow Adirondack seed grower Ralph Child of Childstock Farms did), local cartoonist Mark Wilson (who loves Adirondack Blue potatoes) noticed them and composed a political cartoon illustrating the major forces behind the event. Tucker Farms had a bumper crop of Peter Wilcox potatoes this year (2011). Yields were much higher than ever before and we now have an unexpectedly large supply. This purple-skinned, yellow-fleshed specialty potato is already a favorite among the top chefs in the Adirondack Tri-Lakes area. It was bred for flavor and nutrition (unusual traits for a breeder to focus on). Florence Fabricant, food editor at The New York Times, suggests its flavor is full and earthy with a hint of hazelnuts. It has more than 40% of RDA for Vitamin C and is high in antioxidants, especially the carotenoids (15% higher than Yukon Gold). It can be roasted, boiled or sliced into wedges and fried. It makes superb hash browns. It has been a top seller at farmers' markets and is becoming popular in boutique restaurants. If you haven't tried the Peter Wilcox, now is the time.
